Fabulously Easy Dinners: Ravioli

Italian TomatoesHere's one quick dinner that's so easy, it's amazing how good it tastes.  This one is suitable for company, a quiet night by yourself, or simply a fast lunch. Even better, ravioli is great as leftovers!

The Menu:

  • Ravioli (in red or white sauce)
  • Garlic Bread
  • Caesar Salad
  • Chianti

Shopping List:

  1. Frozen ravioli (typically found in the frozen foods section your grocery store, though some gourmet versions may lurk with the refrigerated foods)
  2. Tomato sauce (you can go with the bottles for a variety of unique flavors, or stick with typical cans for a less expensive but equally tasty sauce)
  3. Parmesan cheese (fresh grated is best, but out of the can is acceptable, too)
  4. Bagged Caesar salad (croutons and dressing often come with; if not, pick these up, too)
  5. Baguette (or any kind of fancy bread)
  6. Butter or margarine
  7. Garlic clove
  8. Chianti

Incredibly Easy Instructions:

    Italian RavioliRavioli:

  1. Bring a pot of water to a boil.
  2. Dump in frozen ravioli; cook. (Cook times vary from three minutes to 10; check the package for specifics.)
  3. Drain the cooked ravioli in a strainer.
  4. Dump it into a serving dish or back into the pot; pour sauce over the top.
  5. Plate up and sprinkle (or dump, your call) parmesan on top.

    Garlic Bread:

  1. Preheat oven to 350 degrees.
  2. Slice bread (the size and shape doesn't really matter); plan on two to three pieces per person
  3. Chop a small amount of garlic into small pieces (whether you want small, thin slices or tiny bits is up to you)
  4. Spread with margarine or butter; be sure to cover the entire surface lightly
  5. Sprinkle chopped garlic on top
  6. Place in oven for five to 10 minutes (until the sides are a toasty brown, but the top is buttery yellow.

Serving:

  1. Fill each plate with ravioli, salad tossed with dressing and croutons, and a couple of slices of garlic bread.
  2. Pour the chianti (the classic Italian red doesn't need to be chilled; five minutes in the fridge should do it)
  3. Light a few candles, put on Dean Martin's Greatest Hits or Putamayo's Italian Cafe CD and enjoy!
