Dinners: Baked Chicken Parmesan
Ready for an Italian themed night? This recipe
is surprisingly easy--it only tastes like you slaved over a hot stove. We'll
start with Chicken Parmesan, add a Caesar salad, and some fresh vegetables for a
meal that's worth sharing!
Easy Chicken Parmesan:
You'll Need:
- 2 chicken breasts, both on the large side
- 2 cups of seasoned bread crumbs (feel free to
add your own touch with Italian seasonings and/or a bit of parmesan cheese)
- 4 Tablespoons of olive oil
- 1 egg, beaten
- 1 cup of flour
- 1 large can or jar of tomato sauce
- 4 slices of mozzerella cheese
Instructions:
- Preheat the oven to 400 degrees.
- Take each chicken breast and slice it in
half, with the knife parallel to the cutting board, so that you have four flat
pieces of chicken.
- Coat both sides of each piece of chicken
first in the egg, then the flour, then in the seasoned bread crumbs. The
more crumbs, the more crunchy and delicious it'll be, so don't be afraid to
really press the chicken cutlets into the crumb mixture!
- In a frying pan, heat the olive oil. As
you bread each cutlet, saute it until it's slightly brown.
- After sauteeing, set each piece of chicken on
a paper towel to absorb the oil.
- In a 8x8 or 9x11 baking dish, spread half the
jar of tomato sauce along the bottom. Place your breaded and sauteed
chicken cutlets in next. Follow with the rest of the tomato sauce.
Finally, place a slice of mozzerella on each chicken breast.
- Bake for 10 minutes. (Check to make
sure that the cheese is melted, but not burned--that's the secret to perfect
chicken parmesan!)
Serve with:
- Caesar salad
- Corn and diced roasted red peppers
- Merlot, slightly chilled
