Choosing the Perfect Wine: Cabernet

Cabernet
sauvignons have been receiving a lot of attention in recent years as some of the
most delicious reds for a variety of tastes. Originally from France's famed
Bordeaux region, this so-called "King of Red Grapes" more than deserves its
reputation. Cabernet sauvignon ages well, with time allowing the black current
aroma and slight bell pepper undertones to mature and develop. As well, the
aging process mellows this cabernet's tannins. (Tannins are what cause the "dry
mouth' quality of a wine.) Aging time can range anywhere from five to 10 years
for peak flavor from these popular red grapes, but don't be afraid to enjoy a
cab after just a couple of years..
The cabernet grapes ripen in mid to late season,
and some of the best cabernet sauvignons come from California--Napa, Sonoma, and
Paso Robles, to be more specific. This wine finishes well and is wonderfully
aromatic,. It's often blended with wines such as merlots for a more full-bodied
taste. However, these blendings are more common among imported wines as opposed
to California vintages.
Again, black current is the strongest aroma, but
cedar and tobacco are also in the mix, lending an intriguing depth to this wine.
You'll commonly hear the terms "structure" and "complexity" when discussing
cabs, and this lends the cab to pairings with rich foods, such as dark
chocolate, cheese, rich pasta, and red meat. All in all, cabernet sauvignon is
the wine to serve when you're looking for something tasteful, classy, and
enjoyable with a meal.
